7-Up Cake
  • Cooking Time: 30 minutes
  • Preparation Time: 15 minutes
  • For the cake:
  • 1 box lemon cake mix
  • 3/4 cup vegetable oil
  • 1 small (3.4 oz) box of instant lemon pudding mix
  • 4 large eggs
  • 1 1/4 cups 7-Up (or other lemon-lime soda)
  • For the Filling:
  • 1 20oz can crushed pineapple, drained
  • 1 1/3 cup sweetened flake coconut
  • 1 1/2 cup sugar
  • 1 stick butter
  • 2 eggs
  • 2 tsp corn starch
  1. For Cake:
  2. Preheat oven to 325°F. Meanwhile, grease and flour three 9-inch round cake pans.
  3. Combine oil and eggs and beat until well incorporated.
  4. Add cake and pudding mixes on low speed, followed by the 7-Up.
  5. Beat on high for about 2 minutes.
  6. Evenly distribute between the three cake pans. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. For the filling/frosting:
  8. Combine all of the filling ingredients, EXCEPT for the coconut, in a medium pot and bring to a boil over medium heat, stirring constantly.
  9. Reduce heat and simmer for 5 minutes.
  10. Remove from the heat and stir in coconut. Allow to cool completely before frosting the cake.
This was always my dads favorite for Thanksgiving. It has a good lemon flavor and lives up to the 7-Up name. --Derrick H., Wetumpka, AL --Remote, US
