A Delicious Pumpkin Soup

  • 1kg Raw pumpkin
  • 75g White onion, finely chopped
  • 20g Butter
  • 10ml Extra virgin olive oil
  • 1L Vegetable stock
  • 8g Pumpkin seeds
  • 1g Nutmeg
  • Black pepper
  • Sea salt flakes
  1. Wash the pumpkin well, pat dry, and cut into half.
  2. Peel and remove all the seeds using a spoon.
  3. In a preheated cooking pot, add the extra virgin olive oil and butter
  4. Add the onion and cook until caramelized. Then add the pumpkin and sea salt flakes.
  5. Add the vegetable stock, and continue cooking the pumpkin until it gets caramelized.
  6. Simmer for about 45 minutes until thoroughly cooked. Add water or vegetable stock if necessary.
  7. Remove the ingredients from the heat and add the nutmeg. Blend to a smooth mass.
  8. Pour in soup bowl and garnish with pumpkin seeds and extra virgin olive oil.
