A-Train's Pumpkin Chili

  • 3 lb lean ground lamb or beef
  • 2 cup canned pumpkin
  • 2 (10 oz) cans red kidney beans, rinsed and drained
  • 2 medium onions, chopped
  • 3 (15oz) cans diced tomatoes
  • 2 Tbsp chili powder
  • 1/4 tsp ground red pepper
  • 2 Tbsp honey
  • 1 tsp salt
  • 2 bay leaves
DIRECTIONS
  1. Brown the ground lamb or beef in a skillet, stirring until crumbly, then drain
  2. Combine the lamb or beef, pumpkin, chili powder, red pepper, sugar, salt and bay leaves in a large kettle over medium heat
  3. Reduce heat to low and simmer, covered for 1 to 2 hours, adding water as necessary
  4. Remove bay leaves before serving
