APPLE MARSHMALLOW CAKE

INGREDIENTS
  • 3 cups all-purpose flour
  • 2 cups sugar
  • 3 tsp baking powder
  • 1/2 tsp salt
  • 1 1/4 cups vegetable oil
  • 1 tsp pineapple extract
  • 1 tsp vanilla extract
  • 3 eggs, lightly beaten
  • 1 cup crushed pineapple
  • 1 cup mini-marshmallows
  • 2 cups peeled, cored, finely chopped apples
  • 8 oz chopped dates
  • 3 1/2 oz can flaked coconut
  • 1 cup chopped pecans
DIRECTIONS
  1. Preheat oven to 325*F. Grease and flour 10" tube pan.
  2. Lightly spoon Flour into cup to measure and level off.
  3. In a large bowl, combine flour, Sugar, baking powder and salt.
  4. Add oil, extracts, eggs and pineapple.
  5. Beat 3 minutes at medium speed.
  6. Stir in remaining ingredients.
  7. Pour into Prepared pan.
  8. Bake at 325*F for 1 hour and 20 minutes, or until pick Inserted in center comes out clean.
  9. Cool upright for 15 minutes on rack.
  10. Remove from pan. If desired top with glaze made of 1 cup powdered sugar And 3-4 tablespoons apple juice.
  11. Spread glaze over cake while still warm.
