APPLE PIE FILLING

  • 6-8 apples, peeled, cored, and sliced (I like Gala, Jonathon, or Golden delicious)
  • 2/3 c. sugar (more if apples are quite tart)
  • ¼ c. tapioca starch
  • 1 T. cinnamon (or to taste)
  • ½ c. water
DIRECTIONS
  1. Mix together in a large saucepan apples, sugar, tapioca starch, cinnamon, and water. Bring to boil over medium high heat and turn heat to low and cook until apples begin to get tender and sauce thickens. If using jars, pour immediately into sterilized jar and put on lid to store in fridge for a week to use as desired. If freezing, pour into freezer bag, cool completely before putting into freezer. If you want to can the filling, place uncooked ingredients, stirred together in sterilized canning jars and process according to your canner’s instructions. Butter an 8”x11” baking pan. Spread pie filling in bottom of pan. Pour the dry cake mix evenly over the top of the apples. Melt butter in the microwave, then pour melted butter evenly over top of cake mix. In a small bowl mix together brown sugar and cinnamon, sprinkle evenly over top of cake mix. Bake in an oven preheated to 350F for 45-60 minutes until golden brown. Best served with warm.

In the Autumn when apples are harvested I like to purchase bushels of apples to eat and to make into apple pie fillings for the freezer. With apple pie fillings and pie dough in the freezer and cake mixes in the pantry; it is as easy as the proverbial "apple pie" to whip up an apple pie or apple cobbler.
