APPLE THYME STUFFED PORK CHOPS

INGREDIENTS
  • Cooking Time: 6-8 hours in slow cooker on low/3- 4 hours in slow cooker on high

  • 1 ½ lbs. pork loin cut into 4-6 thick slices, with a pocket cut into the side of each
  • 1 c. of peeled and diced apple, 1-2 apples
  • ½ c. Wisconsin sharp white cheddar, grated
  • ¼ c. diced onion
  • 1 T. fresh thyme, minced
  • Freshly ground sea salt and freshly ground black pepper to taste
  • 1 T. butter or olive oil
DIRECTIONS
  1. Mix together apple, onion, and cheese. Stuff this mixture into the pocket of each pork chop as full as you can, secure it closed with a toothpick. Season chops with salt, pepper, and thyme. Heat 1 T. butter or olive oil in a skillet, sear pork chops on each side until lightly browned. Transfer to slow cooker, cover and cook on low 6-8 hours or on high 3-4 hours. Remove toothpicks before serving.
