ARTICHOKE-CHEESE CANAPE
INGREDIENTS

  • 2 jars marinated artichoke
  • hearts, chopped (6 oz.
  • each)
  • 1 bunch green
  • onions-scallions, chopped
  • 1 clove garlic, minced
  • 4 eggs
  • salt and pepper
  • 1/2 lb. Cheddar cheese,
  • shredded
  • 6 soda crackers, crushed
  • 1 tsp. parsley
  • dash of Tabasco
DIRECTIONS
  1. Brown onions and garlic in oil of artichoke hearts.
  2. Remove from skillet. In a bowl, break the eggs and add salt,pepper, Cheddar cheese, crackers, parsley and Tabasco plus artichoke hearts which have been minced and onion-garlic mixture.
  3. Blend well! Pour into an 8 x 8-inch oiled pan and
  4. bake at 325 degrees for 35 to 40 minutes.
  5. Cool slightly and cut into 1 inch squares.
  6. Serve hot or cold.
