ARTICHOKE-CHEESE CANAPE
INGREDIENTS

- 2 jars marinated artichoke
- hearts, chopped (6 oz.
- each)
- 1 bunch green
- onions-scallions, chopped
- 1 clove garlic, minced
- 4 eggs
- salt and pepper
- 1/2 lb. Cheddar cheese,
- shredded
- 6 soda crackers, crushed
- 1 tsp. parsley
- dash of Tabasco
DIRECTIONS
- Brown onions and garlic in oil of artichoke hearts.
- Remove from skillet. In a bowl, break the eggs and add salt,pepper, Cheddar cheese, crackers, parsley and Tabasco plus artichoke hearts which have been minced and onion-garlic mixture.
- Blend well! Pour into an 8 x 8-inch oiled pan and
- bake at 325 degrees for 35 to 40 minutes.
- Cool slightly and cut into 1 inch squares.
- Serve hot or cold.
