ARTICHOKE-CHICKEN CASSEROLE

INGREDIENTS
- 1 (9 oz.) pkg. frozen
- artichoke hearts
- 2 Tbsp. butter or oleo
- 2 Tbsp. flour
- 1 1/2 c. cooked chicken
- 1/2 c. milk
- 1/2 c. chicken stock
- 1/3 c. shredded cheese
- (Cheddar)
- 2 Tbsp. sherry
- salt and pepper
DIRECTIONS
- Cook artichoke hearts according to directions. Melt
- butter in saucepan; stir in flour, then slowly add milk and
- chicken broth, stirring constantly. Cook and stir until
- thickened. Remove from heat; stir in half the cheese and add
- the sherry. Season to taste with salt and pepper. Layer
- drained artichoke hearts and chicken in greased casserole,
- starting with the artichokes. Pour cheese sauce over mixture
- and sprinkle remaining cheese on top. Bake, uncovered, at 350 degrees
- for 15 to 20 minutes. Also can use crabmeat in place of
- chicken and can also add mushrooms
