ARTICHOKE-CHICKEN CASSEROLE

INGREDIENTS
  • 1 (9 oz.) pkg. frozen
  • artichoke hearts
  • 2 Tbsp. butter or oleo
  • 2 Tbsp. flour
  • 1 1/2 c. cooked chicken
  • 1/2 c. milk
  • 1/2 c. chicken stock
  • 1/3 c. shredded cheese
  • (Cheddar)
  • 2 Tbsp. sherry
  • salt and pepper
DIRECTIONS
  1. Cook artichoke hearts according to directions. Melt
  2. butter in saucepan; stir in flour, then slowly add milk and
  3. chicken broth, stirring constantly. Cook and stir until
  4. thickened. Remove from heat; stir in half the cheese and add
  5. the sherry. Season to taste with salt and pepper. Layer
  6. drained artichoke hearts and chicken in greased casserole,
  7. starting with the artichokes. Pour cheese sauce over mixture
  8. and sprinkle remaining cheese on top. Bake, uncovered, at 350 degrees
  9. for 15 to 20 minutes. Also can use crabmeat in place of
  10. chicken and can also add mushrooms
