ARTICHOKE NIBBLES
INGREDIENTS

  • 2 (12 oz.) jars marinated
  • artichoke hearts
  • 1 small onion, chopped fine
  • 1 clove garlic, minced
  • 4 eggs
  • 1/4 c. bread crumbs
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 1/8 tsp. Tabasco sauce
  • 3 c. sharp Cheddar cheese,
  • shredded
  • 2 Tbsp. minced parsley
DIRECTIONS
  1. Saute onion and garlic with drained marinade from 1 jar of artichoke hearts until onion is limp.
  2. Discard other marinade.
  3. Beat eggs and add crumbs and seasonings.
  4. Chop artichoke hearts fine.
  5. Add cheese, onion, artichoke hearts and parsley
  6. to egg mixture.
  7. Grease 7 x 11-inch pan.
  8. Bake at 325 degrees for 30 minutes.
  9. Let cool in pan and cut into squares.
  10. Best reheated.
  11. Makes 28 pieces.
