ARTICHOKE QUICHE
INGREDIENTS

- 2 (6 oz.) marinated artichoke
- hearts
- 1 small onion, chopped fine
- 1 clove garlic, minced
- 1/4 tsp. salt
- 1/8 tsp. oregano
- 1/2 lb. shredded sharp Cheddar
- cheese
- 4 eggs
- 1/4 c. dry bread crumbs
- 1/8 tsp. pepper
- 1/8 tsp. Tabasco sauce
- 2 Tbsp. minced parsley
DIRECTIONS
- Drain marinated artichoke hearts from 1 jar into a frypan.
- Drain another jar.
- Chop all artichokes, then set aside.
- Add onion and garlic to pan and saute until limp.
- In a bowl, beat eggs with fork or wire whip. Add crumbs, salt,pepper, oregano and Tabasco sauce. Stir in cheese, parsley,artichoke and onion mixture.
- Turn into greased 7 x 11-inch baking dish.
- Bake in 325 degrees oven about 30 minutes or until set.
- Let cool in pan and cut into 1-inch squares. Serve warm or cold.
- Makes about 6 dozen medium squares.
