ARTICHOKE QUICHE
INGREDIENTS

  • 2 (6 oz.) marinated artichoke
  • hearts
  • 1 small onion, chopped fine
  • 1 clove garlic, minced
  • 1/4 tsp. salt
  • 1/8 tsp. oregano
  • 1/2 lb. shredded sharp Cheddar
  • cheese
  • 4 eggs
  • 1/4 c. dry bread crumbs
  • 1/8 tsp. pepper
  • 1/8 tsp. Tabasco sauce
  • 2 Tbsp. minced parsley
DIRECTIONS
  1. Drain marinated artichoke hearts from 1 jar into a frypan.
  2. Drain another jar.
  3. Chop all artichokes, then set aside.
  4. Add onion and garlic to pan and saute until limp.
  5. In a bowl, beat eggs with fork or wire whip. Add crumbs, salt,pepper, oregano and Tabasco sauce. Stir in cheese, parsley,artichoke and onion mixture.
  6. Turn into greased 7 x 11-inch baking dish.
  7. Bake in 325 degrees oven about 30 minutes or until set.
  8. Let cool in pan and cut into 1-inch squares. Serve warm or cold.
  9. Makes about 6 dozen medium squares.
