ARTICHOKE SQUARES APPETIZER
INGREDIENTS
  • Cooking Time: 30
  • 3 (6 oz.) jars marinated
  • artichoke hearts in oil
  • 1 clove garlic
  • 1/2 c. onion
  • 4 eggs
  • 1/4 c. bread crumb mixture
  • (recipe follows)
  • 1/2 lb. sharp Cheddar cheese,
  • grated
  • 2 Tbsp. minced fresh parsley
  • 1/4 tsp. salt
  • 1/8 tsp. dried oregano
  • 1/8 tsp. pepper
  • 1/8 tsp. Tabasco sauce
  • Bread Crumb Mix:
  • 1 c. dry bread crumbs
  • 2 Tbsp. Parmesan cheese
  • 1/4 tsp. dried savory
  • 1/4 tsp. dried basil
  • 1/4 tsp. dried tarragon
DIRECTIONS
  1. Drain oil from 1 jar of artichoke hearts into a 12-inch skillet and saute garlic and onion in oil for about 5 minutes.
  2. Set aside.
  3. Drain and discard oil from remaining artichoke
  4. hearts.
  5. Chop hearts finely and set aside. In a bowl, beat
  6. eggs until foamy and blend in the bread crumbs, cheese, parsley, salt, pepper and Tabasco sauce. Add the finely chopped artichoke hearts to the egg mixture and stir gently to blend.
  7. Add the onion and garlic.
  8. Mix well and spoon into a greased 9x 9-inch pan. Bake at 325 degrees for 30 minutes.
  9. Cool before cutting into 2-inch squares.
  10. Before serving, place in a 325 degrees
  11. oven for 10 to 12 minutes.
  12. Then place on a warm serving plate
