Acorn Squash Bowls

- Acorn squash
- OJ, maple syrup or honey
- Optional additions: yogurt, shredded or diced raw vegetables, ground nuts, pb, instant nonfat dry milk, shredded/diced fresh fruits, canned pineapple, chopped dried fruit, berries, jam or jelly.

- Optional additions:
- *yogurt, shredded or diced raw vegetables, ground nuts, pb, instant nonfat dry milk, shredded/diced fresh fruits, canned pineapple, chopped dried fruit, berries, jam or jelly.
- Bake squash, first. If you have trouble cutting the squash in half, try micro waving the whole squash for about 30 seconds, just enough to soften it up a little. Or, Halve by inserting a bench scraper into squash & hit with a rubber mallet. Scoop out seeds & strings. Add some water in the bottom of your microwave able dish. Cover with plastic wrap & bake on high 15-25 minutes. Or, bake in oven, covered with water in the bottom of the dish, for 40-60 minutes.
- After the squash has been baked:
- Scoop out flesh, being careful to keep rind intact. Add a TB or 2 of oj, maple syrup, or honey into mashed flesh. Return mashed squash to acorn bowls. May optionally add yogurt, shredded or diced raw vegetables, ground nuts, pb, instant nonfat dry milk, shredded/diced fresh fruits, canned pineapple, chopped dried fruit, berries, jam or jelly.
