Alaska Salmon and Cilantro Potato Salad

INGREDIENTS
  • 1 can (14-3/4 oz.) or 2 cans (7-1/2 oz. each) Alaska
  • salmon, drained and flaked
  • 1/4 cup fresh cilantro, chopped
  • 1 tsp. garlic, minced
  • 1-1/2 cups nonfat mayonnaise
  • 1/3 cup red onion, diced
  • 1/3 cup celery, diced
  • 2-1/2 lbs. red potatoes, cooked and quartered, with skin
  • left on
  • Salt and pepper, to taste
DIRECTIONS
  1. Place mayonnaise, cilantro, garlic, onion and celery into
  2. a large mixing bowl; combine well. Add Alaska salmon and
  3. potatoes; gently mix all ingredients together to coat.
  4. Taste, adding salt and pepper as necessary. Chill for 1 to
  5. 3 hours for best results. Garnish with fresh cilantro and
  6. serve.
