Alfredo Chicken and Biscuits

  • 2 cups cooked chicken breast (cubed)
  • 2 cups fresh broccoli (chopped)
  • 1 1/2 cups fresh carrots (sliced)
  • 1 cup frozen peas, thawed
  • 1 cup onion (chopped)
  • 1 jar Alfredo sauce
  • 1 cup biscuit/baking mix
  • 2 Tbsp olive oil
  • 1/3 cup milk
  • 1/4 tsp dill weed
  1. In large skillet, saute broccoli, carrots and onion until crisp-tender.
  2. Stir in chicken, peas and Alfredo sauce and heat until well blended.
  3. Place mixture in a lightly greased 8-in square baking dish.
  4. In a small bowl, combine baking mix, milk and dill until just moistened.
  5. Drop by rounded tablespoonfuls onto chicken mixture,
  6. Bake uncovered in preheated 400 degree oven for 18-20 minutes or until bubbly and biscuits are golden brown.
This recipe was an idea that came from a boxed dinner with my own variations. It turned out to be a hit with my family. A quick and easy main dish meal. It goes great with a fresh salad.
