Almond-Banana Bread
INGREDIENTS

  • Wet ingredients:
  • 2 ripe bananas - mashed with the fork
  • 70 ml oat milk/ almond milk
  • 70 ml extra virgin olive oil
  • 2 whole eggs
  • 100 g brown sugar
  • 1 tsp almond essence
  • 1 tsp vanilla essence
  • Dry ingredients:
  • 200 g almond flour
  • 65 g plain flour
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 100 g chopped unsalted nuts (almonds, or mixed nuts)
DIRECTIONS
  1. preheat the oven at 175-180 degrees Celsius
  2. mix the wet ingredients with a whisk
  3. pour them over the wet ones and mix until just combined
  4. use a loaf pan lined with baking paper
  5. bake at 170-180 degrees, middle of the oven, up&bottom, no convection, for 40 min
  6. let cool in the pan for 10 min
