Almond Cake Squares

  • Crust:
  • 2 eggs
  • 1 c. sugar
  • 1 c. butter, melted
  • 1 c. a.p. flour
  • Topping:
  • 1/2 c. butter
  • 1/2 c. sugar
  • 1/2 c. almonds
  • 1 Tblsp. a.p. flour
  • 1 Tblsp. milk
DIRECTIONS
  1. Grease and lighty flour a 13x9x2 inch baking pan; set aside.
  2. Crust:
  3. In a medium bowl, beat eggs and 1 c. sugar with an electric mixer on medium speed until thick and lemon-color (about 8 min.).
  4. Stir in the 1 c. melted butter and the 1 c. flour.
  5. Pour into prepared pan.
  6. Bake at 350 degrees for 20-25 minutes or until toothpick inserted near center comes out clean and edges begin to pull away from pan.
  7. Topping:
  8. Meanwhile, for topping, in small saucepan, combine the 1/2 c. butter, the 1/2 c. sugar,the almonds, the 1 Tblsp. flour and the milk.
  9. Cook and stir over medium heat until mixture
  10. comes to a boil.
  11. Turn oven to broil: adjust oven rack so top ofcake is 3-4 inches from heat. Spoon almond
  12. mixture over hot cake; broil 2-3 minutes oruntil golden. Cool.
