Almond Joy-like Candy
  • 12 ounces Sweetened Condensed Milk
  • 2 ounces Unsweetened Chocolate
  • 1/4 teaspoon Salt
  • 1 teaspoon Vanilla Extract
  • 3 cups Coconut Shreds
  • 1 cup Almonds -- (48 nuts)
  1. Preheat oven to 350 degrees F.
  2. In top of double boiler, combine condensed milk,
  3. chocolate and salt.
  4. Cook over rapidly boiling water; stirring often, for 5 to 7 minutes, or till
  5. until mixture thickens.
  6. Remove from heat and stir in vanilla and coconut.
  7. Form cookies by dropping teaspoons of mixture onto a parchment lined baking sheet, 1" apart. Top each with a whole almond.
  8. Bake on middle shelf of oven for 10-12 minutes, watching cookies carefully after 8-9 minutes, as the bottom can get too brown.
  9. Immediately remove cookies from pan with metal spatula and cool on parchment lined cooling rack.
  10. (These freeze well)
