Almond Turkey Casserole

  • 2 C. uncooked egg noodles
  • 1 pkg. (10 oz) frozen broccoli cuts
  • 2 Tbs. butter or margarine
  • 2 Tbs. all-purpose flour
  • 1 tsp. of salt
  • 1/2 tsp. ground mustard
  • 1/4 tsp. pepper
  • 1 1/2 c. milk
  • 1 C. (4 oz.) shredded Swiss cheese
  • 2 C. cubed cooked turkey (or chicken)
  • 1/2 c. slivered almonds toasted
DIRECTIONS
  1. Cook noodles according to package directions; drain. Cook broccoli according to package directions; drain.
  2. Place noodles and broccoli in a large bowl; set aside.
  3. In a saucepan, melt the butter.
  4. Stir the flour, salt, mustard and pepper until smooth.
  5. Gradually stir in milk.
  6. Bring to a boil; cook and stir for 2 minutes or until thickened.
  7. Remove from heat; stir in cheese until melted.
  8. Add the turkey; pour over noodle mixture.
  9. Transfer to a greased 1 1/2 qt. baking dish. Sprinkle with almonds.
