Aloo Sag - Potatoes and Spinach

- 5 tablespoons olive oil
- 1 tablespoon butter
- 1 red onion diced
- 1 1 inch piece ginger grated
- 2 cayenne or chili peppers finely diced
- 1 teaspoon tumeric
- 2 cloves of garlic minced
- 1 pound red potatoes peeled and diced into 1 inch cubes
- 1 pound of frozen or fresh spinach
- salt to taste
DIRECTIONS
- Use a large pan that has a lid so you can steam the potatoes.
- Heat the pan and add the oil, butter and onion.
- Saute the onion for 2 minutes.
- Add ginger, chilies, garlic and turmeric. Cook until onion is transparent.
- Add potatoes, toss with other ingredients and salt to taste.
- Cover and cook until potatoes are tender, about 15 minutes.
- Once potatoes are tender add spinach.
- If frozen the spinach must be thawed and dewatered, if fresh just add it.
- Cook until spinach is wilted.
