Amish Slaw aka Refrigerator Slaw

  • 1 medium head cabbage, cored and shredded
  • 1 medium onion, finely chopped (I prefer sweet onion)
  • 2-3 carrots, grated
  • (optional: thinly sliced red peppers)
  • 1 cup white sugar
  • 1 cup vinegar
  • 1 tsp salt
  • 1 tsp celery seed
  • 1-2 tsp mustard
  • 3/4 cup vegetable oil
  1. Prepare cabbage, carrot, and onion and mix together in large bowl.
  2. Mix together remaining ingredients and put into saucepan. Bring to a boil over medium heat and then cook over for 3 minutes.
  3. Cool vinaigrette completely.
  4. Pour over slaw veggies and let stand for a minimum of 3 hours or overnight is even better.
This is a great make-ahead slaw, the longer it stands the better it gets. It is easy to make and tastes so clean and good. I goes with any meal!
