Andy's Southern CornBread

  • 1 C. All Purpose Flour
  • 2 C. Cornmeal (he likes yellow, other people like other kinds)
  • 2 TBLS Sugar
  • 1 tsp Salt
  • 2 tsp Baking Powder
  • 2 tsp Baking Soda
  • 2 Eggs
  • 1/4 C. Vegetable Oil (extra for pan)
  • 1 C. Milk
  • Tabasco Sauce (couple shakes)
  1. Pre-heat over to 350 F
  2. Mix Dry ingredients in one bowl
  3. Mix Wet ingredients in Large bowl
  4. Add Dry to Wet "add more milk to make it sloppy" (consistancy of pancake batter I'm told)
  5. Heat an oiled oven proof pan on the stove (he uses a large Cast Iron Skillet) Pour in mixture
  6. Put pan in the oven for about 40 minutes (check with knife - it comes out clean if it's done)
Uh. Andy's my husband. His ancestry, when asked, is "Southern." So, New Year's Day we eat Black Eyed Peas and Corn Bread. It's sposed to be Lucky. Which it is for me. He makes food, I sit here, and then we eat. That's luck already!
