Angel Acres Feel Better Chicken Noodle Soup

  • 2 chicken breasts with skin
  • 2stalks celery, chopped
  • 1 carrot, chopped
  • 1 onion, diced
  • ¼ cup olive oil
  • 6 cups water
  • 1 bay leaf
  • ¼ cup parsley, chopped
  • 2 tsp. salt
  • dash pepper
  • 1 tsp. thyme
DIRECTIONS
  1. Cook vegetables in olive oil in large pan until soft.
  2. Add chicken breasts and cook to brown.
  3. Add water and next 5 ingredients
  4. Let simmer for 2-3 hours
  5. Remove chicken breasts, remove skin and bones as necessary and cut into bite size pieces.
  6. Add 1 cup of noodles (can substitute rice, if desired), cook until noodles are soft.
  7. Add additional water as needed.
  8. Correct seasonings and return chicken to pot.
