Annette's Orange Almond Salad
INGREDIENTS

  • 1/2 head Iceberg lettuce - chopped
  • 1/2 head romaine lettuce - chopped
  • 1 c jicama peeled and diced in 1/4" pieces
  • 1 can mandarin oranges, well drained
  • 1 package sliced almonds
  • 1 T butter
  • 1 t sugar
  • dressing
  • 1/2 t salt
  • dash pepper
  • 2 T sugar
  • 1 T minced fresh parsley
  • 2 T red wine vinegar
  • 1/4 c canola oil
  • Dash garlic tabasco sauce
DIRECTIONS
  1. Prepare almonds by sauteing in 1 T butter and 1 t sugar on low heat, until butter browns and sugar is melted.
  2. Remove from heat and continue to stir until almonds are cooled. Set aside
  3. While cooking almonds, make dressing.
  4. Dressing
  5. Combine all ingredients in blender, or you can use stick blender to mix well. Pour into another container and chill until ready to serve
  6. In a large bowl, combine lettuces, almonds, jicama, and oranges.
  7. If bringing to potluck, dress at event.
  8. Shake dressing and toss well with all ingredients.
  9. Serve immediately
