Apple Broccoli Salad
INGREDIENTS

  • Salad:
  • 4 C Broccoli
  • 1/2 C Shredded Carrots
  • 1/4 C Red Onion
  • 2 Lg Green Apples (or your choice)
  • 1/2 C Pecans
  • 1/2 C dried Cranberries
  • Dressing:
  • 1/2 C Mayo
  • 1/2 C Greek Yogurt - (Black Cherry is my favorite)
  • 2 Tbls Lemon Juice
  • 1 Tbls sugar
  • 1/2 tsp salt and pepper (omit for sweeter garnish)
DIRECTIONS
  1. Salad ingredients: Chop small or medium and add all to bowl.
  2. Mix together Dressing ingredients
  3. Toss together and place in refrigerator till ready to use.

Sweet: Summer Topping and side salad: Use the black cherry yougurt to make your dressing, the cranberry and sweeter notes blend with the crisp green apple and broccoli for a burst of flavors. Not one getting too strong over the other. Sour: Greek Flavor hints: For more of a meat side salad; Use plain yogurt and add the salt and pepper. This is great over pork or on the side. Plain yogurt brings the sours to life and delicious as well!
