Apple Clafoutis
  • 3 cups milk
  • 1 1/4 cups granulated sugar
  • 1 vanilla bean, split lengthwise
  • 2/3 cup all-purpose flour
  • 5 eggs, beaten
  • 1 1/4 pounds baking apples (about 3 or 4 medium), peeled, cored, sliced and tossed with lemon juice (4 cups)
  • Confectioners' sugar for garnish.
  1. Preheat the oven to 375 degrees. Generously butter deep 10x2-inch round layer cake pan.
  2. In medium saucepan, combine milk, granulated sugar, and vanilla bean. Bring to boiling, stirring to dissolve sugar. Reduce heat and boil gently for 2 to 3 minutes. Remove from heat and set aside.
  3. Measure flour into large mixer bowl. Gradually add eggs, 1/4 cup at a time, beating at medium speed of electric mixer until blended after each addition and scraping sides of bowl often. (Batter should be smooth with no lumps.
  4. Remove vanilla bean from milk. Gradually pour milk into egg mixture, beating constantly until blended. (Mixture will be very thin.) Pour into baking pan.
  5. Arrange several layers of apple slices evenly over top of batter.
  6. Bake at 375 for 65 to 75 minutes until puffed, golden brown, and firm to the touch in center.
  7. Cool on rack until lukewarm, about 2 hours. Sprinkle with confectioners' sugar to garnish. Serve this flan-like dessert in wedges.
