Apple Crepes

  • 1 1/4 Cups all-purpose flour
  • 1/4 Cup sugar
  • Pinch of salt
  • 4 Large, lightly beaten eggs
  • 1 1/4 Cups low fat milk
  • 1 Tablespoon margarine
  • 3 Tart apples, such as Granny Smith, peeled and cut into 1/2inch cubes
  • 1/4 Teaspoon cinnamon
  • 1/4 Cup apple juice or cider
  • Plain or vanilla yogurt
DIRECTIONS
  1. In a blender, pulse flour, salt and 1 tablespoon sugar and then add milk and eggs and blend 1 minute. Melt margarine in a skillet and sauté apples until soft, 5 minutes. Add the rest of the sugar and cinnamon and continue to cook an additional 5 minutes. Pour in apple juice and cook 3 more minutes. Spray a 10 inches skillet with nonstick oil and allow oil to heat. Pour 1/4 cup of batter in skillet and swish around. Cook until just starting to turn brown and flip. Cook 30 more seconds and remove from skillet. Arrange two on a plate and place 2 tablespoons of apples in middle and fold twice.
