Apple Jacks
INGREDIENTS
- Cooking Time: 7-10
- 1 cup light brown sugar
- 1 stick butter, room temp
- 1 egg
- 1 1/2 cups flour
- 1/2 tsp nutmeg
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 baking soda
- 1 cup peeled and chopped apples
- 1/4 cup finely chopped walnuts (optional)
- Sugar/cinnamon mixture (optional)
DIRECTIONS
- Preheat oven to 375 degrees F. Spray a baking sheet with PAM.
- In a large mixing bowl stir together the flour, nutmeg, cinnamon, salt and baking soda. Set aside.
- In a large bowl, mix together the brown sugar, butter and egg until light and fluffy. Gently fold in by hand the flour mixture. Fold in the apples (and nuts if desired)
- Drop by a tablespoon on prepared sheet. (lightly sprinkle tops with sugar/cinnamon mixture, be careful not to get on baking sheet or it will carmelize and burn).
- Bake for 7-10 minutes until lighlty brown around edges. Do not overbake. Store in loosely covered container.
