Apple-Meat Ring

INGREDIENTS
  • 1 1/2 c. dry bread crumbs
  • 1/4 tsp. pepper
  • 1/4 c. chopped onion
  • 1/4 c. diced apple
  • 2 eggs, slightly beaten
  • 3/4 tsp. salt
  • 1/2 c. applesauce
  • 1/4 c. chopped celery
  • 1 1/2 tsp. mustard
  • 3 c. ground beef or pork
  • Mushroom Sauce:
  • 1 c. mushrooms, drained
  • 2 Tbsp. butter
  • 1/4 tsp. pepper
  • 1/3 c. yogurt
  • 2 tsp. apple juice
  • 2 Tbsp. flour
  • 1/2 tsp. salt
  • 1 c. milk
  • 1 tsp. lemon juice
DIRECTIONS
  1. Mix together bread crumbs, salt and pepper. Blend in applesauce, onion, celery, apple, mustard, egg and ground meat.
  2. Shape into a ring. Put a custard cup inverted in the middle, this will collect the oil and keep it from the meat loaf.
  3. Cover. Cook 6 to 8 minutes of temperature probe to 150. Serve with Mushroom Sauce.
  4. For the sauce: Microwave mushrooms and butter in a large glass measure 1 to 2 minutes. Blend in flour, salt and pepper. Add milk and mix until smooth. Microwave 3 minutes covered, stirring 2 to 3 times until sauce thickens. Blend in yogurt, lemon juice and apple juice.
