Apple Pie Crumble raw vegan
INGREDIENTS

  • Crust
  • 1/2 cup walnuts
  • 1/2 cup almonds
  • 1/2 cup soft pitted dates
  • 1 Tbsp coconut oil
  • sea salt
  • Filing
  • 1/2 cup dried apricots
  • 1/4 cup soft pitted dates
  • 1/4 cup pecans
  • 2 apples (cored and chopped)
  • Juice from half a lemon
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • cashew cream
  • 1/2 cup cashews
  • 1/4 cup maple syrup
  • juice from half a lemon
  • 1 Tbsp cacao butter (or coconut oil)
  • Water if needed to reach desired consistency.
DIRECTIONS
  1. Process crust ingredients in a food processor until crumbly and will stick together.
  2. Reserve 1/2 cup to crumble on the top
  3. Press into a 6-7" spring form pan.
  4. Process filling ingredients in a food processor into small bits, but not a paste.
  5. Press into the pan on top of the crust.
  6. Blend the cashew cream ingredients with a high speed blender until smooth and creamy.
  7. Pour over desired amount.
  8. Crumble reserved crust on top.
  9. Drizzle on more cream if you wish.
  10. Refrigerate until set (4+ hours) - consume within 5 days.
RECIPE BACKSTORY
This pie is easy to prepare and will be well received by your guests. You can make it the day before if you want to, but then maybe you should make 2 because the first one might be gone by the time your guests arrive.
