Apple Salsa
INGREDIENTS
  • 2 apples, finely diced
  • 4 fresh jalapeno peppers, roasted, seeded, and finely diced
  • zest and juice of 1 lime
  • 1 c currants or raisins, chopped
  • 1/2 c celery, small dice
  • 1/4 c orange juice
DIRECTIONS
  1. Combine all ingredients. Let stand in refrigerator 1 hour before serving.
  2. Goes great on poached or baked halibut, salmon, tilapia or cod!!!
