Apple Souffle

INGREDIENTS
  • 4 Fuji Apples, cored and peeled
  • ½ vanilla bean
  • ½ cup powdered sugar
  • 2 oz egg white
  • 1 oz sugar
  • 2 granny smith apples cored and peeled
  • 1 lime, juiced
DIRECTIONS
  1. Preheat oven to 375.
  2. In a saucepan over medium heat, cook Fuji apples, vanilla bean, powdered sugar and 1 cup of water of 1 hour, or until thick.
  3. emove from heat and remove vanilla bean.
  4. Slice the vanilla bean lengthwise, scrape the inside and add it back to the mixture.
  5. Pulse the mixture in a food processor 5 times or until smooth.
  6. Remove and allow to cool.
  7. In the bowl of an electric mixer or hand mixer, whip egg whites together with sugar for 2 minutes, or until stiff.
  8. Fold the pureed apple mixture into the stiffened egg whites. When it has been properly folded together, divide the mixture into 4 equal parts.
  9. Pour portions into 4 buttered ramekins.
  10. In a food processor, pulse Granny Smith apples and lime juice 4 times.
  11. Spoon the apple mixture into the center of each ramekin.
  12. Bake in a preheated oven for 18 mins.
  13. Remove from heat and serve immediately.
  14. Add a scoop of vanilla ice cream or dust with powdered sugar, if desired.
