Apple Stuffed Chicken

INGREDIENTS
  • 2 skinless, boneless chicken breasts
  • 1/2 cup chopped granny smith apple
  • 2 tbsp shredded swiss cheese
  • 1 tbsp Italian bread crumbs
  • 2 tbsp butter
  • 1/4 cup white cooking wine
  • 1/4 cup water
  • 1 tbsp water
  • 1 1/2 tsps cornstarch
  • 1 tbsp chopped fresh parsley
DIRECTIONS
  1. Combine apple, cheese, and bread crumbs.
  2. Set aside.
  3. Flatten chicken breasts between sheets of waxed paper to 1/4 inch thickness.
  4. Divide apple mixture between chicken breasts, and roll up each breast.
  5. Melt butter in skillet over medium heat.
  6. Brown stuffed chicken breasts.
  7. Add wine and 1/4 cup water.
  8. Cover.
  9. Simmer for 15 to 20 minutes, or until chicken is no longer pink.
  10. Transfer chicken to a serving platter.
  11. Combine 1 tablespoon water and cornstarch; stir into juices in pan.
  12. Cook and stir until thickened.
  13. Pour gravy over chicken, and garnish with parsley.
  14. Serve.
