Apple-Topped Pork Loin

INGREDIENTS
  • 1/4 tsp. salt
  • 2 Tbsp. flour
  • 1/2 tsp. sugar
  • 1/4 tsp. pepper
  • 1 Tbsp. olive oil
  • 1/4 tsp. cinnamon
  • 1 tsp. caraway seeds
  • 1 tsp. ground mustard
  • 1/4 tsp. rubbed sage
  • 1 boneless pork loin roast 4-5 lb.
  • 1 1/2 cup peeled finely chopped tart apples
  • 1/2 packed brown sugar
  • 1/8 tsp. ground mace
DIRECTIONS
  1. In a small bowl, combine the first 7 ingredients and rub over the roast. In a large skillet, heat oil and brown roast on all sides. Place roast on a rack in a shallow baking pan. Bake uncovered at 375 degrees for 1 1/2 hour. Combine topping ingredients and spread over the top of the roast. Bake 1 1/2 hours longer or until meat thermometer reads 160 degrees. Let stand 10 minutes before slicing.
