Apricot Bars
INGREDIENTS
- Cooking Time: 30-35 minutes
- Servings: Makes 3 dozen
- Preparation Time: About 15 minutes
- 3/4 cup butter, softened
- 1 cup sugar
- 1 egg
- 1/2 tsp vanilla
- 2 cups flour
- 1/4 tsp baking powder
- 1 1/3 cups flaked coconut
- 1/2 cup chopped walnuts
- 1 Jar (10-12 oz.) apricot preserves
DIRECTIONS
- In a large mixing bowl, cream the butter and sugar
- Add the egg and vanilla
- Mix well
- Combine the flour and baking powder
- Gradually add to the creamed mixture
- Fold in the coconut and the walnuts
- Press two-thirds of the dough into a greased 13 x 9 inch baking pan
- Spread with the preserves
- Crumble the remaining dough over the preserves
- Bake at 350 F for 30-35 minutes or until golden brown
- Cool in the pan on a wire rack
- Cut into bars
