Apricot Bars

  • 3/4 cup butter
  • 1 cup sugar
  • 1/2 tsp vanilla
  • 1 egg
  • 1/2 tsp salt
  • 2 cups flour
  • 1 1/2 cups coconut
  • 8-oz. jar apricot preserves
  • 1/2 cups pecans, chopped
DIRECTIONS
  1. Cream the butter and the sugar
  2. Add the vanilla, egg, salt, flour, and coconut
  3. Mix well
  4. Spread 3/4 of the mixture in a greased 11 x 7 inch oven-proof glass dish
  5. Spread the preserves on the top
  6. Combine the remaining quarter of the mixture and the nuts.
  7. Crumble on top of the preserves
  8. Bake at 350 F for 40-45 minutes, or until golden
  9. Cut into bars while still warm
  10. Makes 20 bars
