Apricot Muffins
  • 1 cup Dried Apricots, Chopped
  • 1 cup Boiling Water
  • 2 cup Flour
  • 3/4 cup Sugar
  • 1 tsp Salt
  • 1/4 cup Butter, Melted
  • 1/4 cup Vegetable Oil
  • 1 cup Buttermilk
  • 1 Egg
  1. *Preheat oven to 400 degrees; grease muffin pan, or line with paper cups
  2. *Place apricots into a small bowl and pour the boiling water on them; let stand for 5 minutes
  3. Oven Temperature: 400°F
  4. *In a medium bowl, stir together the flour, sugar, baking soda, and salt
  5. *In a separate bowl, whisk together the melted butter, oil, buttermilk, and egg
  6. *Pour the wet ingredients into the dry and stir until just blended (it is ok for the batter to have some lumps)
  7. *Drain water from apricots, and mix them into the batter
  8. *Spoon into the prepared muffin cups
  9. *Bake for 15 minutes in the preheated oven, or until the top springs back when lightly pressed; cool in the pan over a wire rack.
