Arlene's Easy Stuffed Shrimp

  • Cooking Time: 18 to 20
  • Servings: 4
  • 1 lb 13-15 count Shrimp raw, cleaned and split (butterfly)
  • 18 Ritz crackers, crumbed
  • 3 Tablespoons butter, melted
  • 1 large can minced clams, drained
  • 2 Tablespoons snipped parsley
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon salt
  • dash pepper
  • 1/3 cup dry Sherry
DIRECTIONS
  1. Shell & devein shrimp.
  2. Slit each along vein side about halway through. Combine ritz cracker crumbs & butter, stir in clams, parsley, garlic powder, salt & pepper.
  3. Stuff each shrimp with clam mixture.
  4. Arrange in 13 X 9 baking dish,
  5. Bake in moderate oven (350) 18 to 20 minutes, basting occasionally with sherry.
  6. Makes 4 servings.
  7. Serve over rice.
