Arroz Con Pollo - Chicken And Rice
INGREDIENTS
- 2 large onions finely chopped
- 1 large green pepper finely chopped
- 2 cloves of garlic
- ½ cup olive oil
- salt, pepper and oregano to taste
- In a large pot, sauté the above listed ingredients until tender. Add:
- 1 whole Chicken cut up (or you can substitute shrimp if desired)
- 3 cups of rice (mom likes Uncle Ben’s for this recipe
- 4 cups water
- 1 small can of tomato sauce
- salt and olive oil to taste
DIRECTIONS

- Cook covered on a low heat for 15 to 25 minutes, until most of the liquid has been absorbed. Add:
- 1 small jar of pimentos
- 1 small can of petite pous (peas)
- Continue to cook until the rice has absorbed all the excess liquid and is tender to the bite.
