Artichoke-spinach Casserole
INGREDIENTS
  • 1 (14 oz.) can artichoke bottoms, drained and rinsed
  • 2 (10 oz.) pkg. frozen spinach, chopped
  • 1 stick butter
  • 1 (8 oz.) pkg. cream cheese
  • 1 1/2 c. cheese (Cheddar and Swiss combo)
  • Salt and pepper
DIRECTIONS
  1. ARTICHOKE-SPINACH CASSEROLE
  2. 1 (14 oz.) can artichoke
  3. bottoms, drained and rinsed
  4. 2 (10 oz.) pkg. frozen
  5. spinach, chopped
  6. 1 stick butter
  7. 1 (8 oz.) pkg. cream cheese
  8. 1 1/2 c. cheese (Cheddar and
  9. Swiss combo)
  10. Place artichoke bottoms in a single layer in casserole.
  11. In skillet melt butter and add frozen spinach. Cook over low
  12. heat until spinach is completely thawed and heated through.
  13. Stir in cream cheese and continue cooking until cheese is
  14. thoroughly melted and spoon mixture over artichoke bottoms.
  15. Top with grated cheese. Bake 20 to 25 minutes or until heated
  16. through. Salt and pepper to taste.
