Asian Chicken Soup

  • 3 cups (canned) coconut milk
  • 2 tbsp. chicken bouillon
  • 2 cups cooked chicken, chopped
  • 1 small onion, chopped
  • 2 green onions
  • 2 cloves garlic, chopped
  • ¼ tsp. crushed chili peppers
  • 2 tbsp. lemon juice
  • ¼ tsp. turmeric
  • Steamed Jasmine rice
  • green onions, for garnish
DIRECTIONS
  1. Heat coconut milk and bouillon to boiling. Add chicken, both kinds of onions, garlic, chili peppers, lemon juice and turmeric. Simmer 15 minutes.
  2. Scoop rice into bowls using ice cream scoop. Ladle soup around rice; garnish with green onions.
