Asian Cocktail Meatballs

INGREDIENTS
  • Cooking Time: 20-30 minutes
  • Preparation Time: 15 minutes
  • For meatballs:1 1/2 lb. ground lean turkey
  • 1/4 c. bread crumbs
  • 1 beaten egg
  • 1/2 tsp. salt
  • 1/2 tsp. garlic powder
  • 1/2 tsp. ground ginger
  • For sauce: 1 c. apricot jam
  • 1/2 c. hoisin sauce
  • 1/2 c. rice vinegar
  • 1/2 tsp. cayenne
  • 1 red pepper, diced
DIRECTIONS
  1. For meatballs: Blend all ingredients with a hand mixer until combined
  2. Shape into balls just larger than a walnut
  3. Heat a little oil in a large pan and brown meatballs on all sides and set aside
  4. In a large saucepan, mix sauce ingredients over medium heat until jam is melted
  5. Add meatballs and cook 15 minutes
  6. Serve hot
