Asparagus and Onions
  • 6-8 cups of fresh asparagus, washed and cut into 1"-2" pieces
  • 2 medium onions, cut into large spears
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon ground ginger
  • salt and pepper, to taste
  1. Place oil, asparagus, and onions in skillet. Fry over medium heat, stirring occasionally. Add seasonings and continue stirring to coat.
  2. When asparagus is to desired tenderness (about 15 minutes), remove from heat and serve
