Asparagus and Tomato Quiche

INGREDIENTS
  • 1/2 c.onion, chopped
  • 2 c. asparagus, chopped
  • 1 T. butter
  • 1 T. all-purpose flour
  • 1/2 c. shredded Swiss cheese
  • 1 tomato, chopped
  • 9-inch pie crust, baked
  • 6 eggs
  • 1 c. half-and-half
  • 1/2 t. dried basil
  • 1/2 t. salt
  • 1/8 t. pepper
DIRECTIONS
  1. In a large skillet over medium heat, saute onion and asparagus in butter until tender, about 5 minutes. Sprinkle with flour; stir in cheese and tomato. Pour into pie crust and set aside. Whisk together remaining ingredients until well blended; pour evenly over top. Bake at 375 degrees for 30 to 35 minutes. Let stand 5 minutes; cut into wedges.
