Aunt Fanny's Jam Cake
INGREDIENTS
  • Cooking Time: 30-35 minutes
  • 2-1/2 C flour
  • 1 C sugar
  • 3-1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 C shortening
  • 2 eggs
  • 1/2 C milk
  • Jam
DIRECTIONS
  1. Butter and flour a good-sized loaf cake pan.
  2. Sift dry ingredients.
  3. Cut in shortening, or rub in well with fingers.
  4. Make a hole in center and break in the two eggs and mix.
  5. Add the 1/2 cup milk and mix thoroughly.
  6. Allow to rest 10 minutes.
  7. Divide dough into three parts.
  8. Roll and pat out one part.
  9. Lay rolled dough in the bottom of buttered and floured pan.
  10. Spread with jam.
  11. Roll and pat out second part of dough.
  12. Lay rolled dough in the bottom of buttered and floured pan.
  13. Spread with jam.
  14. Make strips out of the balance of dough.
  15. Criss-cross strips over the jam.
  16. Bake at 350 degrees for 30-35 minutes.
