Aunt Judy's Creamy Chicken Pasta Salad
  • 1/2 Cup peeled, diced cucumber
  • 1/2 Cup Miracle Whip
  • 1/4 Cup buttermilk
  • 3 Tbls. chopped chives
  • 1 Tbls. lemon juice
  • 1 1/2 tsp. dijon mustard
  • 1/4 tsp. celery seeds
  • Salt and pepper to taste
  • 1/2 lb. small shaped pasta
  • 1 lb. boneless, skinless, chicken
  • 1 Cup grape tomatoes, chopped
  • 2 green onions, chopped
  • 1 bunch each: arugula, parsley
  1. Make the dressing by mixing first eight ingredients together; set aside.
  2. Cook the pasta in salted water, rinse under cold water and transfer to large bowl.
  3. Saute' chicken in olive oil until fully cooked; let cool for 5 minutes and cut into strips.
  4. Chop arugula and parsley, then add to the pasta along with onions and tomotoes.
  5. Add the dressing and toss to coat.
Not only a salad, but can be used as a main dinner entre' Really deliciouus on a hot summer day!
