Aunt Kate’s Pumpkin Roll

- For the roll
- 3 eggs
- 1-cup sugar
- ¾ cup pumpkin
- 1 tsp. Lemon juice
- ¾ cup flour
- 1 tsp baking powder
- 1 tsp cinnamon
- ½ tsp nutmeg
- ½ tsp salt
- Filling
- 8 oz. Pk. Cream cheese
- 1 cup powdered sugar
- 4 T cool whip
- ½ tsp vanilla`
DIRECTIONS
- Whip together cheese, sugar and vanilla.
- Fold in cool whip.
- Unroll cool cake and spread on filling and re-roll.
- Chill several hours before serving (also freezes well)
