Aunt Kate’s Pumpkin Roll

INGREDIENTS
  • For the roll
  • 3 eggs
  • 1-cup sugar
  • ¾ cup pumpkin
  • 1 tsp. Lemon juice
  • ¾ cup flour
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • Filling
  • 8 oz. Pk. Cream cheese
  • 1 cup powdered sugar
  • 4 T cool whip
  • ½ tsp vanilla`
DIRECTIONS
  1. Whip together cheese, sugar and vanilla.
  2. Fold in cool whip.
  3. Unroll cool cake and spread on filling and re-roll.
  4. Chill several hours before serving (also freezes well)
RECIPE BACKSTORY
This is one of my all-time favorite recipes. Of all the other pumpkin roll recipes I've eaten, this one still tastes the best. It always reminds me of fall and the leaves changing.
