Aunt Vera Salad (Aunt Tina's Twist)

  • Preparation Time: 30 minutes
  • 16-oz containers Cool Whip
  • 6-oz box orange jello, sugared or sugar free
  • 2 11-oz cans mandarin oranges (drained)
  • 20-oz can crushed pineapple (drained)
  • 24-oz container small curd cottage cheese
  • Optional: 1/4 cup maraschino cherries, quartered
  • Note: Any ingredients may be increased, decreased or removed to your own taste. This recipe doubles or halves well too.
  1. In a large bowl mix together cool whip and cottage cheese. If you prefer a smoother texture, you can beat the cottage cheese in a blender until smooth before adding to the Cool Whip.
  2. Sprinkle the dry jello on them. With a wooden spoon, gently mix the ingredients. Add the fully drained Mandarin oranges, crushed pineapple and maraschino cherries. Gently fold all ingredients together until well mixed.
  3. Carefully spoon into a pretty serving dish (glass chills more quickly) and chill for at least 1 hour before serving. Enjoy!
Historical note: In the ancient past (long before TVs, cars and cell phones) Mandarin oranges were a tribute fruit, brought to the Chinese Emperors' Courts.
