• 1/2 C sugar
• 1/2 C vegetable oil
• 1 egg
• 1/2 tsp vanilla
• 1 + 1/2 C flour
• 1/2 tsp salt
• 1/4 tsp baking soda

1. Cream oil, egg, vanilla and sugar thoroughly. Add dry ingredients slowly, beating thoroughly after each addition. Drop by teaspoonful on greased cookie sheet. Make dent in middle of each cookie with end of wooden spoon. Fill dent with jam. Bake in preheated 375 oven for 8-10 minutes. Cool on wire rack.

My great aunt Mae McLaughlin made these cookies for us whenever we would visit her down the beach in Nantasket. My mother adopted this recipe and it has become a family favorite.
