Avocado Bruschetta

  • 2 ripe avocados
  • 2-4 slice raw onion
  • 2 celery stalks
  • 1/2 C. virgin olive oil
  • 1/2 C. balsamic vinegar
  • 1/2 t. oregano (fresh preferred)
  • 1/2 minced garlic glove (add more if you love garlic)
  • 1 T. fresh ground basil leaves
  • unsalted bread wafers (Carr crackers - black box - or other flavored wafers)
  1. Divide avocados into 1 cm. "chunks" without creating too much slurry (avoid mushing too much). Dice onions and celery to moderate sized pieces and combine with equal parts olive oil and balsamic vinegar. Mix in salad bowl gently with oregano, garlic, and basil. Serve with flat, unsalted bread wafers and expensive wine (Haha). Red Wine works best with this.
