Avocado Egg Salad

  • 1 Large Avocado (finely diced)
  • 3 Hard Boiled eggs ( Chopped; boil eggs for 6-7 min.)
  • 2 Tbsp. Red Onion (chopped)
  • 1 Tbsp. Chives (chopped)
  • 1 Tbsp. Parsley (chopped)
  • 2 Tbsp. Mayonnaise
  • 1 Tsp. Lemon Juice
  • Salt and Pepper (to taste)
  1. Add all ingredients to a large bowl. Stir to combine.
This healthy egg salad is made extra creamy from the addition of avocado. Such a tasty twist on the traditional egg salad that makes an egg-cellent addition to any lunch box. Eat it with leaf lettuce, Soft crackers ( like Ritz or Captain's Crackers), or on your favorite soft bread/wrap.
